If you want to eat healthy pizzas you will have to make them yourself by following healthy pizza recipes. So,
what would be typical traits of healthy pizza recipes?
Well, healthy pizza recipes would include as little fat or oil as possible in the pizza base, as much fresh
vegetables as possible; non fatty meat or fish, if required and good quality cheese.
So starting with the base. Use your favourite flour: wholemeal, stoneground, rye and make the dough according to
any recipe you have, but substitute a teaspoon of olive oil for butter or margarine, if your recipe calls for
that.
If you do not want to use a bread base, you could experiment with a half block of tofu, some soya flour and an
egg to bind it. Mix well and bake until solid.
Or you could lay your pizza topping directly onto a base of your favourite vegetables like sliced potatoes,
sliced aubergine, sliced courgette or something similar.
Arrange the thinly sliced vegetables in a cake tin with a removable side; bake or put under the grill until soft
and / or slightly charred, then remove the side of the tin and proceed as with a bread pizza.
Truly healthy pizza recipes would call for a tomato sauce base made by reducing fresh tomatoes to a puree. Add
your favourite Italian herbs and spices while cooking or sprinkle them onto the pizza to allow more variation.
Think about oregano, marjoram, thyme and rosemary. Add garlic and or pesto, if required. Crush a clove of garlic
and rub around the edge (half an inch) or your pizza base; spread the sauce over the rest.
Add your favourite chopped vegetables and whatever else: onions, mushrooms, olives, ham, pineapple pieces, tuna,
crab, prawns. Top it off with a little Mozzarella cheese, but go sparingly or just leave the cheese off
altogether.
